Each menu at Hwaro traces a life told through flavor, beginning in the coastal city of Gwangju, where Chef Sungchul Shim first encountered the sea’s abundance and his mother’s intuitive, seasonal cooking. Those early influences carried him to New York, where he refined his craft through French technique and a global perspective. At Hwaro, these experiences converge in a journey from sea to mountain to land, guided by the charcoal brazier at its center — where fire becomes both craft and language, transforming memory into flavor.
Named after the traditional Korean brazier (화로) - a symbol of fire, warmth, community, and connection - the hwaro has long been a gathering point for shared meals and strengthening bonds. That spirit of intimacy and togetherness lives on in every element of the HWARO experience, where Korean fine dining is reimagined through an immersive, multi-course tasting menu that invites guests to gather, connect, and savor.

HWARO was conceived as more than a dining room — it is a living gallery shaped by memory and material. Inspired by the quiet refinement of a traditional Korean royal study, the space was designed to honor the depth of Korean artistic heritage in a contemporary form. Each artisan represented here was selected for their integrity of process and devotion to craft. Their work does not accompany the experience — it is part of its foundation.
